 Our initiative : the food to discover the culture ! 

What could possibly be better than tasting new flavours to discover a country?

We wanted to have a driving initiative, a red thread for our journey, to really immerse ourselves into the local culture.

 

Those who know us well, will not be surprise to see we chose latin gastronomy !

It might evoke the famous peruvian ceviche, the exotic colombian fruits and the brazilian caipirinha, but there's more than than and we have 6 months to discover the culunary wealth of this area.

 

Above the tasting aspect (which importance is not be under-estimated), we mostly seek to discover another aspect of those countries by learning about local culture and by sharing those moments with local people, families, friends !

 

Thus, each discovery will also be related to an experience, a moment, people that will make this trip so fullfilling !

You can help us in our quest of the perfect meal !

 

We have for objectives to come with three recipes from each country !

We will share our culinary discoveries on the website, during the trip, to make drool over !

But most importantly on our return, when you will be able to enjoy them for real and approve our new cooking skills !

 

And because we already know we will miss it, we will certianly need to bring bak some typical ingredients (for which we will have to find some space in our little bags).

 

When we come bak, we will organise a big meal gathering all the "gourmands"to share with your our discoveries !

3) Pachamanca

 

Experience:

The Pachamanca is a typical peruvian dish that is traditionnaly cooked in the earth (they dig a hole in the earth to build a sort of oven and cover it with stones). It can also be prepared in a cookin pan and that's the way most peruvians do it on normal days.

Once more it is Ricardo who is our cooking teacher. We go to his house at lunch to leanr how to cook and then eat with Renato and his wife Patricia, Ricardo and his girlfriend (they all have lunch toether everyday because Renato and Patricia work very close).

 

Ingredients (for 4 people):

- potatoes (1 per person) 

- sweet potatoes (1 per person)

- fèves (3 à 4 gousses par personne)

- meat ( it can be any type of meat and you can also put different meat together - we cooked it with chicken and it was really good!)

- adereso: sauce/ fat spicy typical peruvian

- salt, ajinomoto

 

Preparation:

1. Clean the potatoes, the sweet potatoes (without pealing them), clean the FEVES and cut the ends. 

Clean the chicken (raw) and place it in a plate with some adereso.

2. In a cooking pan, put some adereso. Once is it golden, add, succisvely (one layer above the other): the potatoes, the sweet potatoes, the FEVES and the chicken. Pour the rest of the adereso on it and a cup of boiling water. 

3. Cover the pan with a plastic bag and then with an actual tap.

4. Let it cook for 20/30 minutes and serve it with white rice !
